I have the F1 light- it only happened 3 times in the last 300 miles. No knocking sounds or lower gas mileage- Is it safe to ride the bike? Will I blow a piston? What does a knock sound like anyway?

Like nuts and bolts in a coffe can when it's bad. Or a pinging noise.
Most prevalent at lower rpm high load conditions.
If you're running hi test I'd ride no problem until you got around to fixing it.
In the mean time check the wiring to the sensor(s).
It's probably fine since there are two sensors and the ECM isn't likely to fuel one side of the engine significantly different than the other if one sensor's flaky.
A few bikes have had problems with the wiring for the knock sensor on one side (I think it's the left, but don't quote me on it) or the connector is damaged by heat from the exhaust pipes if it's not routed properly. That would be worth checking, and it will be pretty obvious of that's the problem.
